Autumn is one of the best times of the year to try new foods. There are so many fruits, vegetables, and more that are perfect in the fall! Apples, pumpkins, sweet potatoes, and so much more fill our plates and our bellies as the temperatures begin to drop and the days grow shorter. The flavors of the season make for some pretty immaculate dishes and we would be remiss if we didn’t share some of our fall favorites with you!

How to Make a Delicious and Hearty Fall Harvest Salad

This recipe features some pretty incredible flavors such as fresh spinach, butternut squash, tangy feta cheese, crispy bacon, and radish topped with a delicate flourish of candied pecans and a drizzle of maple-mustard vinaigrette for a filling and fantastic fall salad!

Prep Time: 30 minutes

Cook Time: 20-30 minutes

Total Time: 50 minutes to an hour

Yield: 6 servings

Ingredients

  • About 2 cups of fresh baby spinach 
  • ½ cup butternut squash, cubed
  • ½ cup green apple, sliced
  • ¼ cup feta cheese, crumbled
  • ¼ cup radish, thinly sliced
  • ¼ cup candied pecans, chopped
  • 4 strips bacon, sliced and cooked
  • 2 Tablespoons olive oil
  • Salt and pepper to taste

Maple Mustard Vinaigrette

  • ½ cup olive oil
  • ¼ cup apple cider vinegar
  • ¼ cup maple syrup
  • 2 cloves garlic
  • 2 Tablespoons whole grain dijon mustard
  • 1 ½ Tablespoons lemon juice
  • Salt and pepper to taste

Directions

  1. Preheat oven to 400℉ and prepare butternut squash for roasting by chopping into 1 inch cubes. 
  2. Toss squash in 2 Tablespoons of oil and season with salt and pepper to taste.
  3. Place on a baking sheet and roast in the oven until tender for about 25-30 minutes. Remove and let cool before adding to the salad.  
  4. Slice apples and radishes and prepare bacon according to package instructions. 
  5. Combine all of the ingredients for the vinaigrette in a blender or food processor and blend until creamy and smooth
  6. In a large bowl, combine spinach, butternut squash, apple slices, feta cheese, radish slices, pecans, and bacon. 
  7. Drizzle the vinaigrette over the salad, toss, and serve. Enjoy!
