Savory Grilled Chicken with Quinoa and Vinaigrette

We found an appetizing recipe for perfectly grilled chicken on a bed of arugula and quinoa, seasoned with an aromatic blend of spices and coupled with vinegary hints of flavor from Greek olives and tomatoes. Total Time: 21 minutes

Yield: 4 servings

Ingredients

  • 4 chicken breast cutlets 
  • 1/4 teaspoon herbes de Provence
  • 1 cup quinoa
  • 1/4 cup Champagne vinegar
  • 1/4 cup olive oil
  • 2 green onions
  • 2 Tablespoon Dijon mustard
  • 4 cup arugula
  • 2/3 cup pitted green olives, quartered
  • 12 oz. grape tomatoes, halved
  • ½ teaspoon salt, divided
  • ¼ teaspoon pepper

Directions

  1. To prepare chicken to be grilled, season with herbes de Provence and ¼ teaspoon of both salt and pepper. On medium-high heat, grill chicken for about 3 minutes per side, making sure it cooks all the way through. 
  2. Begin preparing quinoa according to package instructions. 
  3. To prepare the vinaigrette, place Champagne vinegar, olive oil, green onions, Dijon mustard, and ¼ teaspoon salt into blender and puree. 
  4. Take half of the vinaigrette and combine with cooked quinoa, adding the arugula, tomatoes, and olives. Serve with chicken and drizzle with remaining vinaigrette.
