Surprisingly Easy Spicy Cajun Shrimp and Roasted Veggies Sheet Pan Meal

Here’s what you’ll need to make this masterpiece:

Ingredients

  • 1 lb large shrimp, peeled and de-veined
  • 14 oz pork or chicken sausage sliced
  • 2 medium-sized zucchini, sliced
  • 2 medium-sized yellow squash, sliced
  • ½ bunch of asparagus, sliced into thirds
  • 2 red bell peppers, chopped cubed
  • Salt and Pepper to taste
  • 2 Tablespoons olive oil
  • 2 Tablespoons Cajun Seasoning

Directions

  1. Preheat oven to 400° F. In a large bowl, combine shrimp, sausage, zucchini, yellow squash, asparagus, bell pepper and salt and pepper. Add olive oil and cajun seasoning and toss until coated.
  2. Spread evenly onto a sheet pan. Bake for 15-20 minutes or until shrimp is pink and vegetables are tender.
  3. Remove from heat, let cool for 3-5 minutes, serve and enjoy!
