The days are officially getting longer, which is great for vacations, but it can also lead to feeling more drained than usual. When you are feeling a bit groggy, shaking up your diet and incorporating more fresh ingredients is a great way to give yourself a long-lasting boost of energy! But for now, why not enjoy a delectable Mediterranean salad with your very own 5-star quality tzatziki sauce? There’s hardly enough time to get everything done in a single day, and having to spend hours on end cooking likely isn’t at the top of anyone’s to-do list. That’s why we look for recipes that are effortless and take minimal time out of our schedules, or if it does take a little longer, most of that time can be spent resting or by doing other things while you wait! This recipe is no exception!

Greek Power Bowl

Fresh avocado, cucumber, onion, and tomatoes, tangy kalamata olives, tender rice, and homemade tzatziki sauce, what could be more refreshing on a long summer day?

Cook Time: None

Total Time: 20 minutes

Yield: 4 servings

Ingredients

  • 3-4 ounces mixed greens
  • 2 cups rice, cooked
  • 1 cucumber, sliced 
  • 1 cup kalamata olives, pitted and drained
  • 1 cup cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • 1 large avocado, pitted and sliced
  • 1 cup marinated artichoke hearts, drained
  • 15 ounces chickpeas, drained and rinsed
  • 2 Tablespoons fresh parsley, chopped
  • Tzatziki sauce (see recipe below)
  • Fresh mint leaves for garnish

Directions

  1. Cook rice according to package instructions. Prepare fresh ingredients and set aside.
  2. Fill bowls or plates with mixed greens and top with rice, cucumber, olives, tomatoes, onion, avocado, artichoke hearts, beans, parsley and mint leaves (optional).
  3. Serve the Greek bowls with hummus and pita chips, and/or bread, and top with homemade tzatziki dressing (see recipe below).

Homemade Tzatziki Sauce

Tzatziki is a quintessential part of Mediterranean cuisine. Luckily, you can make this sweet, tangy, and creamy sauce easily in the comfort of your own home! This minimal-effort recipe makes 4 servings of the sauce, and it also takes some extra time for the ingredients to rest. Feel free to take that time to yourself or get some extra work done!

Ingredients

  • 2 cups plain Greek Yogurt
  • Cheesecloth
  • 1 English cucumber, diced small
  • 1 teaspoon kosher salt plus more to taste
  • 1 clove garlic, smashed and minced
  • zest and juice from 1 lemon
  • 2 Tablespoons fresh dill
  • 1 Tablespoon olive oil, plus more for drizzling
  • Black pepper to taste

Directions

  1. Place the Greek Yogurt into a large piece of cheesecloth. Place the filled cheesecloth in a collider and situate over a bowl to catch the strained yogurt. Let sit in the refrigerator for 30 minutes to 1 hour depending on the desired thickness of sauce.
  2. Meanwhile, slice the cucumber lengthwise, scrape out the center with a spoon, then dice. Add the cucumber to a mesh strainer and set over a bowl. Sprinkle with 1 teaspoon salt and stir to combine. Let sit for 30 minutes to 1 hour.
  3. Use your hands to smush the salted cucumber through the strainer over the sink. Remember not to rinse it, try to get out as much liquid as possible.
  4. Stir the cucumber into the yogurt. Add a little more salt to the mixture, according to taste.
  5. Add the minced garlic, zest from 1 lemon, and juice from 1 lemon, as well as the fresh dill, tablespoon olive oil, and a few grinds of black pepper and salt to taste.
  6. Stir it all together. Chill for about an hour before serving. Use it on fresh salads or as a dipping sauce and enjoy!
