Blue Cheese Mac and Cheese

Ingredients:

Blue Cheese Mac and Cheese Recipe
  • 2 cups cooked Pasta
  • 1 tbsp dried chives
  • 1 tbsp cracked pepper
  • 1 tbsp onion flakes
Blue Cheese Sauce
  • 160 grams blue cheese
  • 1/2 cup greek yoghurt
  • 1/2 cup cheddar cheese 
  • 1 tbsp onion flakes
  • 1/2 cup left over pasta water

Directions:

  • Heat up cooked pasta in warm water

  • In a heat proof jug add blue cheese, cheddar cheese and greek yoghurt.
  • When pasta is heated, remove from heat, drain keeping the water and add pasta back to dutch oven.
  • Sitr 1/2 cup of pasta water into cheese sauce and stir to combine as cheeses melt
  • Pour cheese sauce over cooked macaroni, add onion flakes and stir to combine. Keep at a low heat until ready to serve.
  • Top with dried chives, cracked pepper and onion flakes.
