Grilled Peach Salad with Curry Pecans & Honey Vinaigrette
This recipe is a great way to usher in the sweet and refreshing heatwaves of summer! Not only does it look and taste delicious, but it also has a ton of other great properties too! It’s gluten-free, Paleo-friendly, vegetarian, and one substitute away from completely dairy-free so it's perfect for everyone!

Ingredients
Dressing
- 2 Tablespoons honey
- 2 Tablespoons plain Greek yogurt (use 1 tablespoon mayonnaise for dairy-free)
- 1 Tablespoon extra virgin olive oil
- 1 Tablespoon apple cider vinegar
- 1 Tablespoon balsamic vinegar
- A pinch of sea salt
Candied Curry Pecans
- ¼ cup pecans
- 1 Tablespoon honey
- ½ teaspoon curry powder
- ¼ teaspoon sea salt
- 1 teaspoon butter
Salad
- 4 ripe and firm peaches
- ½ teaspoon avocado oil
- 5 ounces baby arugula
- ½ cup blueberries
- ¼ cup crumbled goat cheese (or for a dairy-free alternative, sub a diced avocado)
Directions
- Place all the vinaigrette ingredients into a 1-cup mason jar and shake until mixed.
- In a small frying pan over medium heat, combine the pecans, honey, curry powder, and sea salt and bring to a boil. Boil until the pan is dry, about 2 minutes. Remove the pan from the heat and stir in the butter to prevent the pecans from sticking together.
- Preheat your BBQ to high and cut the peaches in half (also, remove the pit). Then cut each peach half into three wedges. Place the peaches in a medium-sized bowl and toss with the oil.
- Grill the peaches for 2-3 minutes per side. Remove them from the grill using an offset spatula.
- Place the arugula in a large bowl with goat cheese, curry pecans, blueberries, and grilled peaches. Toss with the dressing and serve immediately.

Watermelon Feta Salad with Fresh Basil and Balsamic Glaze
Watermelon might just be the summer fruit. It’s juicy, sweet, and refreshing, the perfect food to compliment the seemingly endless heat of summer. Instead of just eating it by the wedge, why not try it in a scrumptious dish like this one! It’s got fresh and zany tastes to bring out the melons sweetness that you’re sure to love!

Ingredients
Salad
- 2 cups arugula
- 1/2 cup watermelon, cubed
- 1/4 cup quinoa
- 1/4 of an Avocado
- 1/4 cup loosely packed red onion, sliced
- 1/4 cup cucumber, chopped
- 1/2 Tablespoon pine nuts, toasted
- 2 large pinches of fresh basil
- 1.5 Tablespoon reduced-fat feta
- 4 oz grilled chicken
Dressing
- 3 Tablespoon white balsamic vinegar
- 1 teaspoon Dijon
- 2 teaspoon honey for drizzling
- Pinch of salt and pepper
- 2 Tablespoon olive oil
- Balsamic Glaze
Directions
- Toss arugula in a little dressing
- Toss quinoa in a little dressing
- Mix the arugula with all toppings and then drizzle with additional dressing and drizzle of balsamic glaze. Finish with a sprinkle of salt and pepper and enjoy!
