Ingredients:
- 1 pound boneless skinless chicken breasts
- 4 light original flavor flatbreads
- 1 cup low-sugar barbecue sauce
- 1/3 cup black beans
- 1/4 cup canned corn
- 1/4 cup salsa
- 1 cup reduced-fat mild cheddar shredded cheese
Instructions:
To poach the chicken:
- Place the chicken breasts in a large pot and cover with two inches of water or stock
- Add two bay leaves, fresh parsley, and whole peppercorns to flavor
- Bring to boil over high heat, cover & reduce heat to low
- Simmer the chicken for 10-15 minutes
- Remove chicken with tongs. Once cool, shred & set aside
To assemble flatbread:
- Preheat oven to 350 degrees F
- Bake flatbread on baking sheet until slightly crisp, 2-3 minutes
- Mix beans, corn, and salsa in a medium bowl
- Remove flatbread from oven and top each evenly with:
- 3/4 cup shredded chicken
- 1/4 cup barbecue sauce
- 1/2 cup bean mixture
- 1/4 cup shredded cheese
- Place flatbreads back into the oven and bake until cheese melts and ingredients are warmed through, 6-8 minutes
