I get the question all the time from people that do MealFit and people that do not do MealFit.
What is the best thing to eat for lunch??
My simple answer is Leftovers. I love leftovers because there is no thinking involved, and little to no work involved as well. Not many people have time or the facility to stop and take 10-15 min and stop and prepare lunch. I also hate going out to eat for lunch. I would rather spend the time working or getting more things done. Lets face it, you don’t get much done the 15 min before lunch and you are for sure not getting tons done the 15 min after lunch.
One thing that needs to be done is there needs to be enough meat/protein made from the night before so that you do have some the next day. With that thought in mind, here are 3 things you need to get every week at the grocery store to have for lunch throughout the week.
#1 Frozen Stir-Fry Veggies.
This is a great buy because you can buy a huge bag for $5 and have a great vegetable side to go with your protein. This is easy because all you have to do is put some butter in a skillet and warm them up for about 6-8 min. You don’t have to stand over them. Stir them every now and then and they are good. You can cook them all while you are getting ready in the morning.
You can also change their taste based on what you season them with. This is how you learn to cook. Take different seasoning and try them. This will not only change up the taste but it will expose you to tons of different things.
#2 Sweet Potatoes
We love sweet potatoes because of all the different things you can do with them. This is something you always need to have on hand because of its ease and convenience.
You can “bake” them in the microwave for about 10 min and have a baked potato. Take a microwave safe bowl and put ½ C water in the bottom. Put the potato in the bottom of the bowl and put a plate on top and microwave on for about 10-12 min (depending on the size of the potato.)
You can cut them up season them and bake them on 425 for 20 min and have “Fries”
You can boil them and mash them and have mashed potatoes. (Add a little canned coconut milk, honey and salt).
All of the above take very little prep time.
#3 Spinach
This one is the easiest one. You can literally eat this out of the bag. Take the left over meat from the night before, put it on top and throw some oil, vinegar and seasoning on there an you have a salad.
You can sauté it with butter, salt and pepper and have it as a side.
With all 3 of these you can get as fancy or as simple as you would like. I like all 3 of these for a number of reasons.
- All three of these items are super affordable.
- Easy to find. You can get any of these at just about any grocery store around.
- You can be creative. There are tons of things you can do with each of these items. Let you imagination run wild. Pinterest or Google any of these items and you will find more than enough ideas.
- GREAT for you. All of these items are natural food that are packed with tons of nutrients.
